Ingredients
- 2 lbs (900 g) boneless, skinless chicken breasts or thighs
- 1 small onion, thinly sliced
- 3 cloves garlic, minced

- 1 can (4 oz / 113 g) diced green chilies
- 2 tablespoons taco seasoning
- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon fresh lime juice
For serving:
- 8–12 soft or crispy taco shells
- Shredded lettuce
- Diced tomatoes
- Shredded cheddar or Mexican cheese
- Sliced avocado

Step-by-Step Instructions
1. Prepare the chicken
Trim any excess fat from the chicken. Pat it dry with paper towels. You can use chicken breasts for leaner meat or chicken thighs for extra juicy, tender tacos.
2. Add the onion and garlic
Place the sliced onion in the bottom of your slow cooker. Add the minced garlic on top.
3. Add the chicken
Place the chicken breasts or thighs over the onions and garlic. Try to arrange the chicken in a single layer if possible.

8. Add lime juice
Stir in the fresh lime juice. Taste the chicken and add a little more salt, taco seasoning, or lime juice if needed.
Let the shredded chicken sit in the slow cooker for another 5–10 minutes so it can absorb the juices.
