🍗 Crock Pot Chicken Pot Pie Filling
Ingredients
Chicken & vegetables
- 2 lb (900 g) boneless, skinless chicken breasts or thighs
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup frozen peas
- 1 medium yellow onion, finely diced
- 2 cloves garlic, minced
Creamy sauce
- 4 cups chicken broth
- 1 can (10.5 oz / 298 g) cream of chicken soup
- 1 cup heavy cream or half-and-half
- 4 tablespoons butter
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried thyme
- ½ teaspoon dried rosemary
- ½ teaspoon dried parsley
- ½ teaspoon onion powder
- ¼ teaspoon garlic powder
For thickening
- 4 tablespoons all-purpose flour
- ½ cup cold water
Step-by-Step Instructions
1. Prepare the vegetables
Dice the onion, carrots, and celery into small, evenly sized pieces. Mince the garlic.
You can use fresh or frozen vegetables. If using frozen carrots and celery, there is no need to thaw them first.
2. Add the chicken to the Crock Pot
Place the chicken breasts or thighs in the bottom of your slow cooker.
Season the chicken with the salt, black pepper, thyme, rosemary, parsley, onion powder, and garlic powder.
3. Add the vegetables
Add the diced onion, carrots, celery, and minced garlic over and around the chicken.
At this stage, do not add the frozen peas yet. They can become too soft if cooked for the entire slow-cooker time.
4. Add the broth and soup
Pour the chicken broth into the Crock Pot.
Add the cream of chicken soup and the butter.
Stir gently around the chicken so the soup begins to mix with the broth, but don’t worry if everything isn’t completely combined yet.
5. Slow cook
Cover the Crock Pot with the lid.
Cook on:
- LOW: 6–7 hours
- HIGH: 3–4 hours
The chicken should be completely cooked and tender enough to shred easily.
Avoid lifting the lid repeatedly because this allows heat to escape and can increase the cooking time.
6. Shred the chicken
Once the chicken is cooked, remove it from the Crock Pot and place it on a plate or cutting board.
Use two forks to shred the chicken into bite-sized pieces.
You can make the pieces very small for a traditional pot-pie texture or leave them slightly larger for heartier bites.
Return the shredded chicken to the Crock Pot.
7. Add the frozen peas
Add 1 cup of frozen peas.
Stir them into the chicken and creamy mixture.
Let everything cook for another 10–15 minutes, just until the peas are heated through.
8. Make the thickening mixture
In a small bowl, whisk together:
- 4 tablespoons all-purpose flour
- ½ cup cold water
Whisk until completely smooth and there are no lumps.
9. Thicken the filling
Slowly pour the flour mixture into the Crock Pot while stirring continuously.
Turn the Crock Pot to HIGH and cook for approximately 15–25 minutes, stirring occasionally.
The filling should gradually become thick and creamy.
How Thick Should It Be?
The finished filling should be thicker than ordinary chicken soup but still creamy enough to spoon easily.
If it looks too thin, let it cook uncovered for a little longer.
If it becomes too thick, stir in a small amount of chicken broth or milk until you reach the consistency you want.
Optional: Make It Extra Creamy
For an especially rich pot-pie filling, stir in 1 cup of heavy cream or half-and-half during the final 15–20 minutes of cooking.
Don’t add the cream at the beginning because prolonged high heat can cause dairy to separate.

Once the filling is finished, you have several options.
Traditional pie crust:
Pour the filling into a pie dish, cover with a prepared pie crust, cut a few small vents in the top, and bake at 400°F (200°C) until the crust is golden brown and the filling is bubbling.
Puff pastry:
Place the filling in individual oven-safe dishes, cover each with puff pastry, and bake until the pastry is beautifully golden and puffed.
Biscuits:
Transfer the filling to a baking dish, arrange refrigerated or homemade biscuits on top, and bake until the biscuits are golden and cooked through.
Easy serving option:
Skip the crust completely and serve the creamy chicken filling over warm biscuits, mashed potatoes, rice, or noodles.
Helpful Tips
- Chicken thighs produce an especially tender and flavorful filling.
- Cut the carrots and celery fairly small so they become tender during slow cooking.
- Add peas near the end to preserve their color and texture.
- Don’t add too much salt initially if your chicken broth and cream of chicken soup are already salty.
- For a deeper flavor, sauté the onion, celery, and garlic in butter before adding them to the Crock Pot.
- If you want a more traditional pot-pie flavor, add ½ cup diced potatoes with the carrots and celery.
- For extra richness, add ½ cup shredded cheddar cheese at the end, although this makes the filling less traditional.
