🛒 Ingredients

For the chicken:

  • 1½–2 lb (700–900 g) boneless, skinless chicken breasts or thighs
  • 2 bell peppers, sliced
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 can (14–15 oz / 400 g) diced tomatoes, drained
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil

Fajita seasoning:

  • 2 teaspoons chili powder
  • 1½ teaspoons ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper, optional for extra heat

For serving:

  • Flour or corn tortillas
  • Fresh lime wedges
  • Chopped fresh cilantro
  • Sour cream
  • Shredded cheese
  • Sliced avocado or guacamole

1. Prepare the vegetables

Wash the bell peppers and remove the seeds. Slice the peppers into thin strips.

Peel and thinly slice the onion. Mince the garlic.

2. Make the fajita seasoning

In a small bowl, combine the chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, black pepper, and cayenne pepper if you’re using it.

Mix everything together well.

3. Add the vegetables to the slow cooker

Place the sliced onions and peppers in the bottom of your slow cooker.

Add the minced garlic.

Return the shredded chicken to the slow cooker.

Stir it together with the cooked peppers, onions, tomatoes, and juices.

Let it sit for about 5–10 minutes with the slow cooker on its warm setting so the chicken can absorb the flavors.

10. Warm the tortillas

Heat your tortillas in a dry skillet for about 20–30 seconds per side, or warm them in the microwave.

Warm tortillas make the fajitas much easier to fold and give them a better texture.

11. Assemble your fajitas

Place some of the chicken and vegetable mixture in the center of each tortilla.

Top with your favorite toppings, such as:
