🍑 Extra-Delicious Peach Cobbler

Ingredients

For the peach filling:

  • 6–8 fresh peaches, sliced (about 6 cups)
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 3 tablespoons butter
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 2 tablespoons cornstarch
  • Pinch of salt

For the cobbler topping:

  • 1½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ cup cold butter, cut into small cubes
  • ½ cup milk or buttermilk
  • 1 teaspoon vanilla extract

Optional:

  • 1 tablespoon coarse sugar for sprinkling
  • Vanilla ice cream for serving

Step 1: Prepare the peaches

Wash, peel if desired, and slice the peaches into fairly thick slices. If your peaches are very juicy, don’t worry—the cooking step will take care of that.

Step 2: Make the secret peach mixture

Place a large skillet over medium heat.

Add the butter, brown sugar, granulated sugar, cinnamon, nutmeg, and salt. Stir until the butter melts and the sugar begins to dissolve.

Add the sliced peaches and lemon juice.

Cook for about 5–8 minutes, stirring gently. The peaches should become tender but still hold their shape.

This is the important trick: cooking the peaches before baking concentrates their natural sweetness and creates a richer, caramel-like sauce.

Step 3: Add vanilla

Turn off the heat and stir in the vanilla extract.

Mix the cornstarch with 2 tablespoons of cold water in a small bowl to make a smooth slurry. Stir it into the warm peaches.

The mixture should become slightly thick and glossy.

Step 4: Prepare the cobbler topping

Preheat your oven to 375°F (190°C).

In a large bowl, combine:

  • Flour
  • Sugar
  • Baking powder
  • Salt
  • Cinnamon

Add the cold butter cubes.

Using your fingertips or a pastry cutter, work the butter into the flour until you have a crumbly mixture with some small pieces of butter still visible.

Don’t overmix. Those little pieces of butter help create a tender, flavorful topping.

Step 5: Add the milk

Pour in the milk or buttermilk and vanilla.

Gently stir just until a thick dough forms.

The dough doesn’t need to be perfectly smooth.

Step 6: Assemble the cobbler

Pour the warm peach mixture into a buttered 9×13-inch baking dish.

Drop spoonfuls of the topping evenly over the peaches. It’s okay if some peach filling remains visible.

For an extra-crispy top, sprinkle a little coarse sugar over the dough.

Step 7: Bake

Place the dish in the preheated oven.

Bake for approximately 35–45 minutes, or until:

  • The topping is golden brown.
  • The peach filling is bubbling around the edges.
  • The center of the topping is cooked through.

If the top browns too quickly, loosely cover it with aluminum foil for the final portion of baking.

Step 8: Let it rest

This part is easy to skip—but don’t!

Remove the cobbler from the oven and let it rest for 15–20 minutes.

The peach sauce will thicken as it cools slightly, making it much easier to serve.

Step 9: Serve it the best way

Spoon the warm peach cobbler into bowls and top with a scoop of cold vanilla ice cream.

The combination of the warm caramelized peaches, buttery crust, and melting ice cream is what makes this cobbler especially delicious.

⭐ The 3 tricks that make the biggest difference

  1. Cook the peaches first — concentrates their flavor and prevents watery cobbler.
  2. Use cold butter in the topping — gives you a tender, buttery, slightly crisp crust.
  3. Add lemon juice + vanilla — lemon brightens the peach flavor while vanilla makes the filling taste richer.

Best tip: If you can find very ripe, fragrant peaches, use them. The quality of the peaches makes a huge difference in the finished cobbler.
