🍑 Peach Cobbler with Cinnamon

Ingredients

For the peach filling

  • 6–7 fresh peaches, peeled and sliced (about 6 cups)
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons cornstarch
  • Pinch of salt

For the cobbler topping

  • 1½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup unsalted butter, melted
  • ¾ cup milk
  • 1 teaspoon vanilla extract

Step-by-step instructions

1. Prepare the peaches
Wash and peel the peaches. Cut them in half, remove the pits, and slice them into roughly even pieces.

2. Make the peach filling
Place the sliced peaches in a large bowl. Add the granulated sugar, brown sugar, lemon juice, vanilla, cinnamon, nutmeg, cornstarch, and salt.

Gently toss everything together until the peaches are evenly coated. Let the mixture sit for about 10–15 minutes. This allows the peaches to release some of their juices and creates a flavorful syrup.

3. Preheat the oven
Preheat your oven to 350°F (175°C).

Lightly grease a 9 × 13-inch baking dish with butter.

4. Prepare the cinnamon topping
In a medium bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.

Pour in the melted butter, milk, and vanilla extract. Stir gently until everything is combined and you have a thick batter.

Don’t overmix—the topping should be soft and tender rather than dense.

5. Add the peaches to the baking dish
Pour the prepared peach mixture into the greased baking dish. Spread the peaches evenly, making sure the juices are distributed throughout the dish.

6. Add the cobbler topping
Spoon the batter over the peaches in small portions. It doesn’t need to completely cover every peach—the batter will spread as it bakes.

For an extra cinnamon flavor, sprinkle a little additional ground cinnamon and granulated sugar over the top.

7. Bake
Place the cobbler in the preheated oven and bake for approximately 45–55 minutes.

It’s ready when:

  • The topping is golden brown.
  • The edges are bubbling.
  • The center of the topping is cooked through.
  • The peach juices are thick and syrupy.

If the top begins browning too quickly, loosely cover the cobbler with aluminum foil for the remainder of the baking time.

8. Let it rest
Remove the cobbler from the oven and let it cool for 15–20 minutes.

This is important because the peach filling will continue to thicken as it cools.

9. Serve warm
Spoon generous portions of the warm cobbler into bowls. For the classic finish, serve it with a scoop of vanilla ice cream.

The combination of warm cinnamon-spiced peaches, buttery cobbler topping, and cold vanilla ice cream is especially delicious.

⭐ Tips for the best cinnamon flavor

  • Use fresh, ripe peaches for the best flavor.
  • Combine cinnamon in both the peach filling and topping rather than putting it only on top.
  • A little nutmeg enhances the cinnamon without overpowering the peaches.
  • Brown sugar gives the peaches a deeper, caramel-like flavor.
  • Don’t skip the lemon juice—it balances the sweetness and makes the peach flavor brighter.
  • Let the cobbler rest before serving so the filling isn’t too runny.

Storage: Cover leftovers and refrigerate for up to 4 days. Reheat individual portions in the microwave or warm the whole cobbler in a 300°F (150°C) oven until heated through.
